Strawberry Avocado Salad
Ingredients:
6 C. (1.5 L) trimmed and torn curly endive and/or spinach
2 C (500 ml.) fresh strawberries, hulled and sliced
1 avocado, sliced
Dressing:
1/3 C. honey
1/3 C. orange juice
1/3 vegetable oil
1 T. poppy seed
Directions:
In large mixing bowl, toss endive, strawberries and avocado. Set aside. In 2 C. measure, combine dressing ingredients. Microwave at high for 45 sec. to 1 min., or until hot. Pour over endive mixture and toss to coat. Serve immediately.
