Ravioli Salad with Spicy Dressing


1 kg ravioli pasta

1 T. olive oil

250 g cherry tomatoes

1 large (320 g) avocado, chopped

1 medium (170 g) red onion, chopped

¼ C. firmly packed fresh coriander leaves

Spicy dressing

½ C. (125 ml) vegetable oil

2 T. white vinegar

½ C. (125 ml.) sweet chilli sauce

1 clove garlic, crushed



Add pasta to large pan of boiling water, boil, uncovered, until just tender; drain.  Rinse under cold water; drain.

Combine ravioli with oil, tomatoes, avocado, onion, coriander and Spicy Dressing in bowl; toss gently to combine.

Spicy Dressing Combine all ingredients in jar; shake well.
